Sesame is a plant species from the sesame family. It is a widely
cultivated plant, thought to be one of the oldest oil plants in the
world. The Persians are known to have used sesame as long ago as
2100 BC. Believed to have originated in South Asia, sesame
assumed both economic and cultural importance at a very early
stage.
The herbaceous plant grows approximately one metre high. Individual
bell-like, thimble-shaped, hairy blossoms form in the upper leaves.
The blossoms bloom in the early morning and wither around noon.
The seeds take around 20 to 30 days to ripen. Because the seeds
ripen at different times they still have to be harvested by hand. The
mature seed capsules dehisce themselves so the plant only has to
be shaken over a cloth to catch them. The saying „open sesame“
implores the shell to open to release the seed.
The oil-rich sesame seeds are processed into sesame oil, which is
mainly used in cooking. Sesame oil is made from the light seeds,
cold pressed and unroasted.

A BALANCED RATIO OF FATTY ACIDS
Sesame oil has a balanced fatty acid ratio with a high omega-3,
omega-6 and omega-9 content. Omega-3 fatty acids play a role
in reducing cholesterol levels. They have a positive influence on
blood lipids and make an important contribution towards keeping
us healthy.
Vitamin E is an effective antioxidant in the body and protects the cells
from harmful free radicals. The sesamol and sesamolin contained in
sesame oil are also strong antioxidants. Sesame oil is a natural source
of these compounds.
A NATURAL SOURCE OF LECITHIN
Lecithin is an important phospholipid with marked emulsifying proper-
ties. It is a central component in cell membranes and plays a crucial
role in the structure of the nervous system.

LEVELS
Vegetable sterols, also known as phytosterols, are secondary
vegetable substances and have a chemical structure that is very
similar to the structure of cholesterol. They can therefore influence
lipid metabolism. The phytosterols are also the key substance in
the biosynthesis of steroid hormones and form part of the cell
membranes.
