They make good profits. Ωmega™ Clams are harvested from a sustainably managed fishery in Golden Bay, at the top of New Zealand’s South Island. Who makes Omega Seafood Cooked Gourmet Clams? We, PHR Processing Ltd are a family owned manufacturer of cooked gourmet seafood. Our owners, Chris and Trish Redwood have been involved in the mussel industry for over 20 years. We aim to produce premium cooked mussels and clams which can be eaten straight from the packet or used anywhere live would normally be used. How is the product made? Taking New Zealand Littleneck Clams which have been sustainably harvested from the pristine waters of New Zealand’s Golden Bay, they are bathed in natural seawater to release any grit before being inspected and placed in a plastic pouch. The pouch is then vacuum sealed and finally cooked under pressure at high temperature in a steam retort (industrial pressure cooker). Natural flavours are captured and retained through this process while food safety and product shelf life are enhanced. Golden Bay

How do they cook in the bag?

Thesinglelayerofvacuumpackedclams,combinedwiththehightemperatureandpressureoftheretort,ensureveryefficientheattransferthroughthepouchtotheclams.Thecontrolledenvironmentoftheretortprovidesheatprocessingconditionswhichhavebeendesignedtoprovideasafeproductwhileoptimisingqualityandyield.

Why do the clams keep for so long?Althoughtheclamsarecontainedwithinapouchtheyhavebeenprocessedunderhightemperatureandtimeparameters.Thismeansthatanyfoodsafetybacteriahavebeenkilledoffduringthecookingprocesswithintheretort.Continuedfoodsafetyisassuredfromthenonaslongasthepouch’svacuumsealisintact(thebaghasabarrierfilmwithaverylowoxygentransferratewhichiskey)andtheproductisrefrigerated.
